Healthy One Pot Pasta with Broccoli and Shrimp. I love a one-pot meal and this one was very good!

Ingredients

  • 12 ounces whole wheat spaghettini pasta
  • 2 cups diced tomatoes with liquid (I blend mine up because the husband hates tomato chunks)
  • 1 sweet onion, sliced thin
  • 6 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 3 teaspoons dried oregano leaves
  • 3 large sprigs of basil, chopped thin
  • 4 cups vegetable broth
  • 2 heads broccoli, cut into florets
  • 1 pound shrimp, peeled
  • 1 teaspoon butter or coconut oil
  • Parmesan cheese (to sprinkle on top)
