Sweet potato and chorizo enchiladas (veggie friendly because I use soy chorizo). Forget the other recipe going around that claims to be the best enchiladas ever -- I've made them both , this one wins. I already want to make it again, and I still have enough leftovers to last for several days.

Ingredients:

  • 2 Tbsp vegetable oil
  • 1 medium (1 lb.) sweet potato
  • 1 medium poblano pepper
  • 2 cloves garlic
  • 3 links (3/4 lb.) chorizo
  • 10 taco size tortillas
  • 1 (15 oz.) can enchilada sauce
  • 1½ cups shredded cheese
