Quick, high protein breakfast idea: Clean egg muffins! Good to make the beginning of the week and reheat for a quick breakfast/ snack rest of the week!

Ingredients:

  • 1 red bell pepper
  • 2 roma tomatoes
  • good handful of fresh basil leaves (cut these from my garden, LOVE the smell of freshly cut basil)
  • 3-4 scallions (green onion)
  • 6 whole eggs + 4 cups of egg whites
