Believe it or not, I love to cook. Next to making people sweat, it might be my next favorite activity. BUT I am very simple. I don’t follow recipes very often, and often “invent” dishes with whatever I have in the house. I also don’t eat very many carbs, so that takes out a lot of the easy-fast meals that I can make for dinner. So, with that, here is a favorite of mine that takes very little time to prep (10 min max) and only 20 minutes to cook. Since you are cooking in foil on the grill, it even limited the dishes used. Perfect! Enjoy and be sure to comment on what you thought about it.

What you need:
2lb Rotisserie Chicken (cooked)
1 small can Low Sodium Tomato Basil Soup
1 box Sliced Mushrooms
Small bunch of Asparagus
Small bunch of Cilantro or Basil to garnish/ flavor
Salt and Pepper

DIRECTIONS
Step 1: Slice asparagus.
Step 2: Divide chicken into the foil packets. One 2lb rotisserie chicken does 4-5 foil packets. You can take the skin off to cut out some of the fat.
Step 3: Throw the mushrooms and asparagus in the foil packets over the chicken. You can also add cilantro or basil here if you want more flavor.
Step 4: Spoon a couple of spoonful’s of the tomato basil soup over the packets. This is where the magic happens. You can also throw in a pinch of salt and pepper here.
Step 5: Close packets and throw on the grill (medium-high) for 15-20 minutes.
Step 6: Take off grill, unwrap, and enjoy!
Easy variations: Swap out soup, use salmon, change veggies, use dill instead of cilantro- the possibilities are endless!
